All our pasta is bronze drawn. This process makes it porous and rough on the surface, so it captures sauces and condiments better and prolongs the flavor.

Pastificio Artigianale 

Ours is a family history, which has its roots in rural Sicily in the Sixties. From the first bakery in Buscemi to the establishment of the company in 1991 in Palazzolo Acreide. Since then the production of fresh pasta has been enriched with dried pasta and the rediscovery of ancient grains.

THE LOW TEMPERATURES SLOW DRYING

The pasta is dried at temperatures below 40 ° and the drying processes are very slow, to allow the pasta to maintain its nutritional qualities intact.
